Summer Salsa This quick and easy summer salsa is a great way to add flavor to your grilled fish, chicken, or tofu. INGREDIENTS Red pepper Mango Red onion Avocado Fresh limes Cumin Jalapeño (optional) DIRECTIONS Finely dice red pepper, mango, red onion, and jalapeño (if using). Slice avocado in small chunks. Mix all ingredients in a bowl. Add fresh lime juice and a pinch of cumin, then mix again. Enjoy!

INGREDIENTS Mango Any type of melon Peaches Assorted summer berries (raspberries, strawberries, blackberries, blueberries) Balsamic vinegar Fresh mint and basil Coconut flakes Sliced almonds DIRECTIONS Dice mango, melon, and peaches.
